Fancakes!
I think we should rename birthday candles fun flames…this whole only getting to make a wish once a year is doo-Hickey. That’s right. I said it…DOO-Hickey. I am a big fan of my kid…and she likes her some pancakes so in keeping with my motto of ‘everything is a party once you start celebrating’ I decided to celebrate the fact that SOMEONE did not get the memo that we don’t have to wake up at 6 am on Saturday and embrace my early riser with some ‘fancakes’…a pancake in her favorite color with lots of fanfare. Plus, I have a copious amount of birthday candles and unless I start figuring out how to integrate them into some non-birthday holidays I may have to get a storage unit to house the half empty boxes. Fancakes recipe: -2 cups pancake mix -1 cup water -a dash of juice…I like to give the water a little kick - a few drops of food coloring -crunchies –basically anything cruchy that is awesome…nilla wafers, granola, cereal – it’s really kinda of a personal call and by personal call I mean whatever you have that if you don’t use within the next few days is in danger of going stale. -1 tbsp orange juice -1/4 cup chopped fruit -1 tsp of melted butter -2 tbsp maple syrup -Birthday Candles 1-In a large bowl combine pancake mix with water, juice, and twirl in the lucky little eaters favorite color by adding a few drops of food coloring… 2-For each pancake, pour scant 1/4 cup batter onto hot lightly greased griddle; the trick to a perfect pancake is to look for the bubbles to appear not along the edges but to wait until the batter is bubbling in the middle of the pancake and then flip it! 3-In a small bowl mix chopped fruit, orange juice, butter, chopped up crunchies, and maple syrup. 4- Place pancake on plate and add your topping and if you are feeling extra nice, a scoop of frozen yogurt! 5-Stick in a fun flame and shout ‘I am your biggest fan but you still need to get your bootie in here and eat breakfast!’ 6-Watch your kids faces as you tell them that you don’t think once a year is enough time for you to celebrate them. 7- Stop crying…it’s just a pancake with a birthday candle.
